One Pot Lemon Chicken Orzo


You don't need to stir this deliciously creamy and cheesy one-pot chicken orzo recipe, unlike risotto. Lemon adds brightness, and spinach and parsley offer colour.


 Ingredients:

  •     Olive oil, extra virgin, two teaspoons
  •     1 cup finely minced yellow onion
  •     Garlic, chopped, 1 tbsp
  •     7 ounces of uncooked orzo per cup
  •     2 cups of cream, thick
  •     Chicken broth, one cup
  •     2 lemons, juiced and zesting
  •     2 cups of cooked chicken, shredded
  •     Freshly grated Parmesan cheese in the amount of 1/4 cup plus more for garnish.
  •     fresh flat-leaf parsley, 2 tablespoons chopped, plus more for garnish
  •     1/4 cup black pepper
  •     0.5 teaspoons of table salt



Directions:

Step 1:

In a big Dutch oven, heat the oil to medium. Add the onion and simmer for 2 to 3 minutes, stirring periodically, until soft. Add the garlic and simmer for 30 seconds, stirring regularly, until fragrant. Orzo is then added and heated through while being regularly stirred for roughly a minute.
 

Step 3:

Add heavy cream, broth, 3 tablespoons lemon juice, 1 teaspoon lemon zest, and cook for 3 minutes over medium heat, stirring regularly to keep the bottom from sticking. Reduce heat to medium-low; simmer for 8 to 10 minutes, stirring often, until orzo is soft and mixture has thickened.
 

Step 4:

For about a minute, stir in the spinach and chicken. Get rid of the heat. For approximately 30 seconds, blend in the fontina, Parmesan, parsley, pepper, and salt until creamy. Serve right away and garnish with more Parmesan and parsley.
